It cost me RM250.00, while Tesco is making promotion of stock clearance and yet it still came costly at RM349.00. I chose this unit because of the large in feed it have. Plus it got 2 speed and a large juice collector. I was forced to buy it because lately, my daughter just won't eat her fruits like apple, pear or other fruits which are quite hard to chew. But she likes grapes very much. And because her doctor said she needs at least one whole fruit each day, I got no choice but to think of a way to make her have her fruits. My colleague suggested make fruit juice for her, so here it is.

Today I made juices from an apple plus some celery. No time to harvest them until last sunday. It tasted like pineapple wine lol because it got a strong alcohol flavor in it. Maybe it's due to I harvested them too late. But overall it is okay and quite refreshing. Not too sweet and not sour too. The residue I save for my third batch of garbage enzyme. Hmm... what fruits should I choose for the next batch ya?

Before pouring out.

The final product.

Strawberry Muffins

This is the best of my bakeries so far. Put one layer of fruit in the glass container, followed by some honey and lastly the lemons. Repeat the steps until you have filled 80% of the container. Open the lid of the container on 3rd day to release the gasses. Closed back the lid and continue to let it fermented for 2-3 weeks. Noticed that the colour of the pineapple is rather pale? This is because I've used Ingki (don't know the exact spelling) pineapple which was much tastier and sweeter than local pineapple. And it is more costly too, RM6.50 per pc. You can find a lot of these pineapple planted along the Banting Road.

Egg Tart ~ Second Trial

Quite successful with this trial. Look at the recipe, I thought it would be simple. But it turns out to be not so easy at all. The cake was not fluffy and was dense, although the taste is okay. Maybe I need to substitute the flour to self raising flour next time. So, wait for the second trial of chiffon cake ya! Anyhow, here are the ingredients and method to do this cake.

Ingredients

1 cup flour
1 tsp baking powder
1/4 tsp salt

3 egg yolks
1/2 cup sugar
1/4 cup oil
1/3 cup water
1 tsp vanilla essence
grated zest of 2 lemons

3 eggs white
1/4 tsp cream of tartar

Method:
Preheat oven to 175 degree Celsius. Combine the flour, baking powder and salt. Add the water, egg yolks, oils, lemon zest and vanilla essence. Whisk the dry ingredients into the yolk mixture until it is blended and smooth. Set aside.

Beat egg whites and cream of tartar until foamy. Continue to beat the egg whites until stiff peaks form. This is what I get from 2 fruits. Use a strainer to filter the juices. As for the balance fruits I buried them in the soil at my garden. Not really juicy huh? Friends said if I use honey then I will get more juices. So my next enzyme will be pineapple with honey and lemon. Still waiting for my pineapple to be more ripe before I cut them. Probably tomorrow or the day after. The taste of this dragon fruit enzyme is very refreshing, with a very little bit of alcohol traces in its sweetness. Store the enzyme in the fridge and dilute a few tablespoon with water whenever desired.

Before being poured out.

Use a strainer to filter the juices and this is the result.

Just For You

Reached home from work and there was Jay Tze holding a card in his hand. So, right now we can only wait and see how it turn out three months later.

Lemon Muffins

Intended to make vanilla flavored muffins, but thought it was too plain, so make lemon flavored instead. The first trial I decided to use dragon fruit. Getting comments that it will taste like wine, so I'm really anticipated :p

Ingredients that I need:
3 dragon fruits
approximately 200gm of brown rock sugar. You can also use organic sugar or honey.
a glass container.
Unlike garbage enzyme, fruit enzyme can only use glass container.

The steps:
1) Rinse/wash the glass container, cutting board and knife and/or peeler and let them air dried.
2) Do cover them if necessary.
3) After they are all completely dry, cut the fruit and place one layer in the glass container.
4) Then followed by rock sugar, then back to one layer of fruit again.
5) Repeat until finish off the fruit and put the last layer of rock sugar.
6) Then close the lid of the container. Store it at room temperature, do not expose to sunlight and heat.
7) Open the lid of the jar on the 3rd day to release the gasses. Then close the lid back and continue to let it fermented for 2 weeks. Then it is ready to consume.

The ingredients.

Ready to be stored.

Homemade Kaya

Getting bored with jam and peanut butter, I decided to make kaya of my own. After doing some searching, I found out it was quite easy. You just need 4 ingredients. But it is the process that time consuming. So, here are the steps.

Ingredients
10 eggs
420ml of thick coconut milk, extracted from 2 coconut.
500gm sugar (I used brown sugar 500gm and later on add 3 tbsp of castor sugar because not sweet enough)
some pandan leaves, knotted

1) Beat eggs and sugar well with a hand whisk. Make sure that all the sugar has completely dissolve.
2) Then pour in the coconut milk and mix well. After that, filter the mixture to get a smooth texture.
3) Transfer the mixture into a double boiler. Cook over rapidly boiling water. Use a long wooden spoon or spatula to stir the mixture. It is very important to keep on stirring the mixture to prevent it from getting rough.
4) Top up the boiling water in the lower pot when necessary.
5) Keep on stirring the mixture until it is thicken enough. For me it took me 2 hours. When the kaya is ready, discard the pandan leaves.
6) Wait until the kaya is fully cooled down before transfer it into container.

Remark: Some recipe ask you to steam the mixture after it has thicken for about 2 to 3 hours until it become curd-like texture. Do not stir during this time. Then put the kaya into food processor or blender and blend or process until smooth. I find it is enough to cook for 2 hours and the kaya was already very thicken.

Mixed well mixture put over rapidly boiling water.

The mixture after cooked for 1 hour. Does it look alright? Initially, I wanted the curtain to be in something like apple green. But cannot find it despite extensive search. Err.... not really very 'extensive' though, just tried Shah Alam Nagoya Textile and Jalan Taiping in Klang. This is what I can find to temporarily hang to the window coz I need to change my sofa cover. This theme really made my living room look 'expensive' because of it's 'yellowness', hahaha. The previous theme? I would say it got a little bit of romantic touch because the major color is purple. Picture? For the first trial, I'm using a 5 kg cooking coil container. The garbage that I saved is mainly fruit skins such as orange, apple, banana and mango peel. I also put in one whole lemon. There are only 4 ingredients to make this enzyme that is an air tight plastic container, fruit or vege dregs, water and brown sugar. The ratio for these are:

1) 10 part of water (depends on your container, only fill 60% of the container)
2) 1 part of brown sugar
3) 3 part of vege or fruit dregs (fill up to 80% full of the container)

Example: 10 litres of water : 1 kg of brown sugar : 3 kg of fruit dregs

In my case, I need 3.5 kg of water, 1 kg of fruit dregs and 350gm of brown sugar.

Step 1: Fill water into the container
Step 2: Add in the brown sugar
Step 3: Follow by the fruit or vege dregs
step 4: Close tight. Ever since I bought the oven last year, I hardly used it. Maybe below 5 times. So got to utilize it a bit more often.

We have 2 categories for the ingredients, one is for the dough and the other for the tart mixture. The ingredients to make the dough:

300gm flour
200gm butter
1 1/2 tablespoon milk powder ( I used my son's) :p
1 1/2 tablespoon castor sugar
1/2 tablespoon custard powder
1 egg

For the mixture:

250gm sugar boiled in 250ml water. Add some pandan leaf for fragrant. Then left it to cool and this will make the syrup. ( I found it too sweet, will reduce to 200gm on next trial)
5 eggs - beat until mix around but not until bubbles appears
200ml evaporated milk

Put all the ingredients into a big bowl and mixing them. After that, refrigerate the dough. Then, we can proceed to make the mixture.

After the syrup had cooled, add in the beaten eggs. Then, keep them refrigerated too. ( Later on, I feel that the mixture need to be filtered to make the texture more smooth and will not have bubbles when it baked.)

After some time, take out the dough and make a small ball and press it over the moulds. The dough must fill the moulds not too thin and not too thick. My first trial was a little bit too thick.
After that, fill the moulds with the eggs mixture, approximately 3 tablespoon per mould.
Then, bake the tarts in oven for 25-30 minutes at 180 C.

Tada! My children loves it very much.

P.S. When I weigh the flour and the sugar, I thought of having fun and weigh every other things else. Then I found something quite shocking. The butter was written 227gm but it did not reach 200gm. Then the custard powder written 300gm but only reached 250gm. Only the sugar weight is accurate i.e. 1kg. Normally, whatever that I planted will not grow healthily. Recently, I have planted a few okras and chilly padi. And I faced these problems:
~ the leaves of the okras plant seems to be eaten by something.
~ the same goes for the chilly padi plant. As you can see from the pictures, the leaves from the sprigs are almost gone.
~ the chilly padi newly grown leaves are wrinkled. No idea how it happen.
~ after the flowers of chilly padi had dropped, the bud of the fruit will become yellowish and dropped soon after.
~ this morning I noticed that are a lot of transparent little eggs under the okras plant leaves. I think that must be the grasshopper's eggs because I saw some little green grasshoppers underneath the leaves.
I did not see any caterpillars, so the culprit must be the grasshopper. But previously, there were a lot of ants eating my chilly padi plant. Then I sprayed water mixed with some pepper to get rid of them. I think it works cause I don't see any ants now.
Can anyone tell me how to deal with this eggs and grasshoppers? This is the first trip for my children ever since they were born, pity huh? Well, at least they were more fortunate than me. We stayed at Holiday Inn for 3 days and 2 nights. The traffic was really congested during those days. We started our journey @ 8.00am. Guess what time we reached at the resort? 2.00pm! Yes 6 hours to reach Penang from Klang. OMG, it's killing me. And it didn't get any better because it's jammed everywhere in Penang. We went to Butterfly Farm, Kek Lok Si and Gurney Drive. Here are some of the photos.

JayTze is too afraid to touch the butterflies...

JayTze and JenThung were afraid of the ocean. To some of you, maybe you have read this story before. And yet, I still couln't help myself but to post it in by blog.

I was walking around in a Target store, when I saw a cashier hand this little boy some money back. The boy couldn’t have been more than 5 or 6 years old. The Cashier said, 'I' m sorry, but you don't have enough money to buy this doll.' Then the little boy turned to the old woman next to him: 'Granny, are you sure I don't have enough money?' The old lady replied: 'You know that you don't have enough money to buy this doll, my dear.' Then she asked him to stay there for just 5 minutes while she went to look around. She left quickly. The little boy was still holding the doll in his hand. Finally, I walked toward him and I asked him who he wished to give this doll to. 'It's the doll that my sister loved most and wanted so much for Christmas. She was sure that Santa Claus would bring it to her.' I replied to him that maybe Santa Claus would bring it to her after all, and not to worry. But he replied to me sadly. 'No, Santa Claus can't bring it to her where she is now. I have to give the doll to my mommy so that she can give it to my sister when she goes there.' His eyes were so sad while saying this. 'My Sister has gone to be with God. Daddy says that Mommy is going to see God very soon too, so I thought that she could take the doll with her to give it to my sister.'
My heart nearly stopped. The little boy looked up at me and said: 'I told daddy to tell mommy not to go yet. I need her to wait until I come back from the mall.' Then he showed me a very nice photo of himself. He was laughing. He then told me 'I want mommy to take my picture with her so she won't forget me. I love my mommy and I wish she didn’t have to leave me, but daddy says that she has to go to be with my little sister.' Then he looked again at the doll with sad eyes, very quietly.
I quickly reached for my wallet and said to the boy. 'Suppose we check again, just in case you do have enough money for the doll!' 'OK ' he said, 'I hope I do have enough.' I added some of my money to his without him seeing and we started to count it. There was enough for the doll and even some spare money. The little boy said: 'Thank you God for giving me enough money!' Then he looked at me and added, 'I asked last night before I went to sleep for God to make sure I had enough money to buy this doll, so that mommy could give it to my sister. He heard me! I also wanted to have enough money to buy a white rose for my mommy, but I didn't dare to ask God for too much. But He gave me enough to buy the doll and a white rose. My mommy loves white roses.' A few minutes later, the old lady returned and I left with my basket. I finished my shopping in a totally different state of mind from when I started. I couldn't get the little boy out of my mind.
Then I remembered a local news paper article two days ago, which mentioned a drunk man in a truck, who hit a car occupied by a young woman and a little girl. The little girl died right away, and the mother was left in a critical state. The family had to decide whether to pull the plug on the life-sustaining machine, because the young woman would not be able to recover from the coma. Was this the family of the little boy? Two days after this encounter with the little boy, I read in the news paper that the young woman had passed away. I couldn't stop myself as I bought a bunch of white roses and I went to the funeral home where the body of the young woman was for people to see and make last wishes before her burial. She was there, in her coffin, holding a beautiful white rose in her hand with the photo of the little boy and the doll placed over her chest. I left the place, teary-eyed, feeling that my life had been changed forever. The love that the little boy had for his mother and his sister is still, to this day, hard to imagine.
And in a fraction of a second, a drunk driver had taken all this away from him.

I actually cried after I've read it and I still do. I guess maybe it's nature of a mother huh? I have no idea whether this is just merely a composed story or it is a true story. But one thing I'm sure, It Touched My Heart.

The Journey of JenThung

JenThung at two weeks old

Getting bigger....

Ahh.. little girl in dress. It seems like he had loss his appetite or the foods no longer attracts him. Not like his early days of weaning where he enjoys his every meals very much. Now, he would played with foods or toss it around. Actually, he can feed himself now but after this behavior, his nanny began to feed him again. and of course he did not like the idea. So, I'm planning to modify a bit of his daily meals, to make them look more interesting. Previously, he would have rice for his main meals. Now, I plan to replace it with other type of carbohydrate such as mashed potatoes or italian pastas. Will try to find other type too. But my son is very particular about the texture of foods. He doesn't like them to be soft, thus I hope he can accept the mashed potatoes. I will be back in part 2 with the meals and the pictures of his fun meal soon, I hope. We consist of 7 adults and my two kids. Actually it was my idea to go there, to celebrate Father's Day in advance. I have heard of this place long time ago, but didn't have the opportunity until now. But it was a big turn down. In my opinion, the food portion was very small not to mention the price. Not really worth it. We tried the 'siau long pao', braised pork belly, fried rice, fried ramen in black pepper, king prawn in sweet sauce, beancurd, shanghai smoked fish, stir fried four season bean, 7 bowls of white rice, 6 glasses of chinese tea, all in a sum of RM204.30 included 15% tax. How was that?
Definately would not return.

note: very sorry, no photos. Today I'm late for home because of the training I have to attend and by the time we can go back, it's already 5.45pm. Supposedly, I can use the NKVE but don't know why I drive towards federal highway instead. OMG, the traffic is slow and heavy. I hardly reach 100 kmph thoughout the journey. Finally, I managed to 'crawl' back home and arrive safely @ 6.40pm.
By the way, there is no coffee served at the training, too bad.

Why coffee and me?

Why? Decided to start blogging just now. Don't know how long I can keep on writing. Well you know, I am working and have 2 toddlers to take care. Did I mention how old are they? 2 1/2 and 1 1/2. A boy and a girl. After a hard day work, it seem to have little time left for me since I would take care of them after work. After tucking them to sleep then only it is my time to do other things such as this. Furthermore, I have 2 online businesses to follow. You can find them in my E-Shop link.
