Sweet & Spicy Dipping Sauce

This dipping sauce can be used with seafood, meat, tofu or even vegetables. Quite suitable for steamboat too.
Here are the ingredients:

2 lemongrass
50gm red chilies (add some chili padi if you like extra spicy)
50gm shallots
50gm garlic
2cm ginger
100gm chili sauce
100gm tomato sauce

1/2 tsp salt
1/2 tbsp sugar
3 tbsp oil

Method:
1) Chop / pound / blend lemongrass, red chilies, shallots and garlic.
2) Heat up oil, stir fry shallots and garlic, add in lemongrass and red chilies and mix well.
3) Lastly, add in all the remining ingredients and cook for a while.
4) Add some water to thinner the sauce according to preferance.
