Lemon Roasted Chicken

This recipe is adapted from Jamie Oliver. The ingredients as follows:
zest and juice of 1 lemon
1 clove of garlic, peeled
a small pinch of mixed dried herbs (I used Italian herbs)
35ml olive oil
sea salt and grounded black pepper, to taste
5 whole chicken leg (I used one whole chicken, cut into 4 parts)

Method:
1) Zest the lemon by gently grating the yellow skin with a fine grater, peel the garlic and grate it as well
2) Mix lemon zest and juice, garlic, mixed herbs and olive oil until well blended.
3) Add a small pinch of sea salt and a grind of pepper. 
4) Pour the marinade over the chicken, rubbing it into every nook and cranny. Cover and leave in the fridge for at least 2 hours, or preferably overnight.
5) Preheat the oven to 200 C.. Spoon the marinade over the chicken and cook in the preheated oven for 45 minutes to an hour, or until golden, crisp and tender.
The taste is great. You gotta try it!
