Harvesting Pineapple Enzyme

It's time to harvest my pineapple enzyme though it's 4 days past the 2 weeks duration. No time to harvest them until last sunday. It tasted like pineapple wine lol because it got a strong alcohol flavor in it. Maybe it's due to I harvested them too late. But overall it is okay and quite refreshing. Not too sweet and not sour too. The residue I save for my third batch of garbage enzyme. Hmm... what fruits should I choose for the next batch ya?
