Fried Chicken Wings

Made this dish last week, but only manage to post today. It was really full of flavour and crunchy too. I followed exactly as the recipe but maybe you can try it with only rice flour and see how it goes.

Ingredients:
8 sets of chicken wings (or you can use which ever chicken part that you like)
6 cloves of garlic
2 tbsp cilantro roots (chinese parsley) only use the bottom part, without the leaves
1/2 tbsp ground black pepper
1 tsp sea salt
2 tbsp oyster sauce
3 tbsp fish sauce
enough oil for deep frying

Flour mixture:
3 tbsp flour
3 tbsp corn flour
3 tbsp rice flour

Method:
1) Clean the chicken and pat dry with paper towel.
2) Blend the garlic, cilantro roots and sea salt until fine.
3) Add the blended paste, fish sauce and oyster sauce to the chicken and mix well. Put in the fridge to marinate for at least 4 hours or overnight.
4) Take out the chicken from fridge 1/2 hour before cooking time.
5) Heat up the cooking oil for deep fry. While waiting, mix the 3 types of flour in a plate. Coat the chicken lightly with the flour and shake off excess flour.
6) Drop the chicken gently into the oil and deep fry until the chicken become crispy and golden brown.
