Dragon Fruit Enzyme

Not enough with garbage enzyme, I going further with fruit enzyme. The first trial I decided to use dragon fruit. Getting comments that it will taste like wine, so I'm really anticipated :p

Ingredients that I need:

3 dragon fruits
approximately 200gm of brown rock sugar. You can also use organic sugar or honey.
a glass container.
Unlike garbage enzyme, fruit enzyme can only use glass container.

The steps:
1) Rinse/wash the glass container, cutting board and knife and/or peeler and let them air dried.
2) Do cover them if necessary.
3) After they are all completely dry, cut the fruit and place one layer in the glass container.
4) Then followed by rock sugar, then back to one layer of fruit again.
5) Repeat until finish off the fruit and put the last layer of rock sugar.
6) Then close the lid of the container. Store it at room temperature, do not expose to sunlight and heat.
7) Open the lid of the jar on the 3rd day to release the gasses. Then close the lid back and continue to let it fermented for 2 weeks. Then it is ready to consume.
