Kung Po Cuttle Fish

I made a mistake during scoring the cuttlefish. I scored the inner part instead of the outer part which resulted the cuttle fish won't curl up. Hehe..paiseh... Anyway here are the ingredients:

Brown sotong (cuttlefish) 2 nos (small)
Onion 1 nos
Dried Chilies 20 pcs, soak with hot water, cut into 3 pcs
Garlic paste 1 tbsp
Chili sauce 5 tbsp
Black vinegar 3 tbsp
Oyster sauce 2 tbsp
Light soya sauce 3 tbsp
Sugar 3 tbsp
Salt 1 tsp
Sesame oil 1 tsp
Chinese wine (Fa Tiu) 1 tbsp
Water
Oil

Method:
1) Use oil to fry the dried chilies and garlic paste, add in the cuttlefish and onions and stir fry.
2) Add in the remaining ingredients and pour in some water. Simmer until the cuttlefish is cooked.

Philips Juice Extractor

Bought a Philips Juice Extractor yesterday. It cost me RM250.00, while Tesco is making promotion of stock clearance and yet it still came costly at RM349.00. I chose this unit because of the large in feed it have. Plus it got 2 speed and a large juice collector. I was forced to buy it because lately, my daughter just won't eat her fruits like apple, pear or other fruits which are quite hard to chew. But she likes grapes very much. And because her doctor said she needs at least one whole fruit each day, I got no choice but to think of a way to make her have her fruits. My colleague suggested make fruit juice for her, so here it is.
Today I made juices from an apple plus some celery. The taste is good and I'm glad that my kids like it too.



Sweet & Spicy Dipping Sauce

This dipping sauce can be used with seafood, meat, tofu or even vegetables. Quite suitable for steamboat too.
Here are the ingredients:

2 lemongrass
50gm red chilies (add some chili padi if you like extra spicy)
50gm shallots
50gm garlic
2cm ginger
100gm chili sauce
100gm tomato sauce

1/2 tsp salt
1/2 tbsp sugar
3 tbsp oil

Method:
1) Chop / pound / blend lemongrass, red chilies, shallots and garlic.
2) Heat up oil, stir fry shallots and garlic, add in lemongrass and red chilies and mix well.
3) Lastly, add in all the remining ingredients and cook for a while.
4) Add some water to thinner the sauce according to preferance.

Banana Chocolate Chips Muffins

I actually forgot to bring back the recipe from my office. At last, I made the muffins using strawberry muffins recipe. The result is as good as the strawberry's. Worth to try.
Ingredients:
125gm butter at room temperature
100gm brown sugar
80gm castor sugar
2 eggs at room temperature
300gm plain flour or cake flour
1/2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 tsp vanilla essence
1 cup of fresh milk
1 cup of mashed ripe banana
3/4 cup of semi sweet chocolate chips
Method:
1) Preheat oven to 180 C. Sift flour, baking soda, baking powder and salt.
2) Cream butter and sugar until creamy. Add in eggs on at a time. Add in vanilla essence.
3) Beat until well mixed. Add in mashed banana and mix well. Add in flour and mix well.
4) Add in milk and mix well. Add in chocolate chips and mix well.
5) Spoon mixture into muffin cups and bake for 25 to 30 minutes until golden brown.

Lemon Roasted Chicken

This recipe is adapted from Jamie Oliver. The ingredients as follows:
zest and juice of 1 lemon
1 clove of garlic, peeled
a small pinch of mixed dried herbs (I used Italian herbs)
35ml olive oil
sea salt and grounded black pepper, to taste
5 whole chicken leg (I used one whole chicken, cut into 4 parts)

Method:
1) Zest the lemon by gently grating the yellow skin with a fine grater, peel the garlic and grate it as well
2) Mix lemon zest and juice, garlic, mixed herbs and olive oil until well blended.
3) Add a small pinch of sea salt and a grind of pepper. 
4) Pour the marinade over the chicken, rubbing it into every nook and cranny. Cover and leave in the fridge for at least 2 hours, or preferably overnight.
5) Preheat the oven to 200 C.. Spoon the marinade over the chicken and cook in the preheated oven for 45 minutes to an hour, or until golden, crisp and tender.
The taste is great. You gotta try it!

Garbage Enzyme ~ Third Batch

This round I'm using a 20 liter pail for my garbage enzyme. And the dregs are mainly from the leftover from pineapple enzyme, oranges peels, other fruits peels and some lemons. So, this is a fruity garbage enzyme. The ingredients for the enzyme:
10 liter water
3kg fruit dregs
1kg brown sugar



Harvesting Pineapple Enzyme

It's time to harvest my pineapple enzyme though it's 4 days past the 2 weeks duration. No time to harvest them until last sunday. It tasted like pineapple wine lol because it got a strong alcohol flavor in it. Maybe it's due to I harvested them too late. But overall it is okay and quite refreshing. Not too sweet and not sour too. The residue I save for my third batch of garbage enzyme. Hmm... what fruits should I choose for the next batch ya?

Strawberry Muffins

This is the best of my bakeries so far. It tasted just nice. With these ingredients I can make 17 cups of muffins.

Ingredients:
125gm butter (room temperature)
100gm brown sugar
80gm castor sugar
2 eggs (room temperature)
300gm plain flour
1/2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 tsp vanilla essence
3/4 to 1 cup fresh milk
1 cup of strawberry yogurt (140gm)
Fresh strawberries cut into desired small pieces

Method:
1) Preheat oven to 180 degree Celsius. Sift together flour, baking soda, baking powder and salt.
2) Cream butter and sugar until creamy. Add in eggs one at a time. Add in vanilla essence. Beat until well mixed. Add in yogurt and mix well.
3) Add in flour and mix well.Add in milk and fresh strawberries and mix well.
4) Spoon mixture into muffin cups and bake for 25 to 27 minutes until golden brown.
